Creamy Caesar Salad with Grilled Shrimp

IMHO, Caesar is the king of salads, and I've been making this dressing recipe for years - it's a family favorite. Paired with tangy-soy shrimp from the grill and crunchy romaine, it's a perfect summer main. 

Creamy Caesar Salad with Grilled Shrimp

Serves 5

For the Salad:

  • 1 cup freshly grated Parmesan cheese
  • 2 (10-ounce) heads romaine lettuce, outer leaves discarded, inner leaves washed and dried, and cut horizantally into 1 inch sections
  • 1 cup grape tomatos, halved
  • 1 cup croutons (it's so easy to make your own: cut whatever bread you have around (my favorite is country French) into small cubes, place on baking sheet, drizzle with olive oil, add salt + pepper, bake for 15 minutes at 350 degrees)
    • Combine naked salad components - now it's properly prepped for its dressing!


  • 1 cup mayo
  • 1/4 olive oil
  • 1 tablespoon fresh lemon juice (approx. 1/2 lemon)
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 large clove garlic
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon pepper (or to taste)
    • Peel and mince garlic clove, set aside. In a small bowl, whisk mayo and olive oil together using fork. Then add the garlic, lemon juice, Worcestershire sauce, Dijon mustard, salt and pepper. Continue to whisk all ingredients until fully combined. Keep refrigerated until use.

Marinade and Shrimp:

  • 1 pound fresh peeled + deveined large shrimp (approx. 20-25 pieces)
  • 1 cup reduced sodium soy sauce
  • 1 tablespoon Frank's Red Hot Sauce
  • 1 large clove garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
    • Place raw shrimp in a large plastic bag, set aside. Peel and mince garlic. Preheat grill for medium-low heat. In a medium bowl, whisk the diced garlic, soy sauce, hot sauce, salt, and pepper until thoroughly combined. Transfer marinade from bowl to plastic bag. Seal and marinate for 30 minutes to 1 hour. Lightly oil grill grate. Add shrimp to a grill basket and cook for 7-9 minutes.  Let cool slightly and add directly atop salad, and enjoy!
