Purple Potato Salad

Purple Potato Salad

Potato salad is one of my favorite summer sides - and this purple iteration is as beautiful as it is delicious. 

Purple Potato Salad

Serves 8

  • 2 pounds purple potatoes
  • 8 radishes
  • 4 green onions
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1/2 lemon
  • 1/2 teaspoon kosher salt
  • Fresh ground black pepper
    • Rinse and scrub the potatoes. Fill a large pot with water and add a few pinches of salt. Bring to a boil, then boil the potatoes for about 20 minutes or until tender. Drain the potatoes and run them under cold water. Slip the skins off of the potatoes and cut them into bite sized pieces. Thinly slice 8 radishes and 4 green onions. In a small bowl, mix together ½ cup sour cream, 1 tablespoon olive oil, the juice of half of a lemon, and ½ teaspoon kosher salt. Pour the dressing over the potatoes and add plenty of fresh ground black pepper. Mix to combine, and add additional kosher salt to taste. Serve immediately at room temperature and enjoy!
