Quinoa and Colorful Veggies, Arugula, + Chicken

Monday! Hi! Bright veggies to start the week off right. :)

Quinoa and Colorful Veggies, Arugula, + Chicken

  • Red onion
  • Cup of shredded carrots
  • Two chicken breasts (sauteed in olive oil with salt and pepper to taste)
  • Cup of quinoa (cooked with 1 cup chicken stock and 1 cup water)
  • Handful arugula
  • 1/2 cup or to liking crumbled feta
    • Prep chicken by washing thoroughly and adding salt and pepper. Saute chicken over medium heat until cooked through (4-5 mins a side), then slice. Cut veggies and then combine with chicken in skillet, cook on medium heat to liking. Meanwhile, cook quinoa (these are directions I use). Then combine quinoa, veggies, and chicken. Add feta and arugula. I like it both hot and cold - enjoy!
