Dijon Mustard Brussels Sprout 'Slaw'

This week I am detoxing from all of the [glorious] cream based dining I did this past weekend! This is a fresh, easy lunch featuring my main veggie these days, Brussels sprouts. I say 'slaw' because my little Cuisinart food processor only has Chop and Grind (new R&B track?) options, so it's a bit more of a minced experience than a sliced one. :) A perfect (also gluten-free) salad!

 

Coleslaw

  • 1 package Brussels sprouts
  • Handful sliced almonds (toasted if you have time)
  • Handful craisins
  • ⅓ cup fine Parmesan cheese

Dijon Mustard Dressing

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • Salt to taste

Directions

  1. Prepare the sprouts: first, cut off the tough ends of the sprouts and any unpleasant outer leaves
  2. Shred in a food processor using the slicing blade or what you have!
  3. If you don't have a food processor, slice them as thinly as possible using a good knife
  4. Whisk together the olive oil, vinegar, honey, mustard and garlic
  5. Add dressing to the shredded sprouts with the almonds, chopped dried fruit, Parmesan
  6. Enjoy!
