Modern Love: The Veggetti

A marvel of modern innovation, the Veggetti has changed the lunch game forever. In one miraculous minute, it creates a bowl of fresh, delicious zoodles! I prefer to eat them raw, but you can blanch them if you like (good directions here). One zucchini makes about 2 cups of zoodles, so I Veggetti (noun as well as verb?) two for lunch. A quick sauce is all it takes to make them actually taste like carb noodles. I made a simple peanut sauce (recipe below) and added carrots, snow peas, and protein of choice (was craving shrimp, which I just sauteed in a little olive oil and S + P). It's the best $11.99 I've ever spent!

Simple Peanut Sauce!

  • 1 tablespoon peanut butter
  • 2 tablespoon sesame oil
  • 2 tablespoon soy sauce
  • tablespoon brown sugar
  • 1 teaspoon sesame seeds
  • Veggies of choice
  • Protein of choice
  • Handful of crushed peanuts

One step wonder: combine all the ingredients in a bowl and mix well!
