Vegan No Bake Chocolate Brownies with Almond-Banana Frosting

A few years ago I became obsessed with Clif Bar Kid Chocolate Brownie Z Bars. I mean, OBSESSED. Bought on bulk from Amazon. Replaced meals with them. Snuck them into movies/classes/bars. Organic and relatively healthy, they honestly taste like out-of-the-box brownies. I've been experimenting making my own ever since and I think I finally got it! I added a little banana sweetness for bonus. The perfect protein packed sweet treat. :) 

For brownies:

  • 1 cup oats

  • 1/4 cocoa powder

  • 2 tablespoons coconut oil

  • 1/4 cup almond milk

  • 1/4 cup maple syrup

  • 1/4 cup black beans

  • 1/4 cup light brown sugar

  • 1/2 teaspoon baking powder

  • Dash of salt

For frosting:

  • 3/4 cups almonds (preferably blanched, I only had regular :))

  • 1/4 cup maple syrup

  • A banana

  • 1 teaspoon salt

  • 1 tablespoon light brown sugar

  • Dash of salt

Directions:

  1. First add all the ingredients for the brownies into a food processor until fully combined (3-4 minutes).

  2. Then divide into mini muffins pan. Set aside.

  3. Combine ingredients for frosting until smooth (3-4 minutes).

  4. Spread on top of brownies.

  5. Place in freezer for about 1 hour before eating.

  6. Enjoy!
