Orzo, Artichoke, Chicken, and Grape Tomato Lettuce Wraps

Warmer weather means I am all about easy, healthy meals. Inspired by the Chicken Lettuce Wraps offered at the great, gourmet P.F. Chang's, I took a Greek spin on the ever popular classic. So fresh and so good.

Also, on a side note, is it just me or is orzo an incredibly underrated pasta?!



  • 1 cup orzo

  • 6 tablespoons olive oil

  • Juice from half a lemon

  • 2 cloves garlic, minced

  • 14 oz can artichoke hearts, quartered

  • 1 1/2 cups grape tomatoes, slices

  • 1/4 cup of crumbled feta cheese

  • 3 boneless, skinless and thinly sliced chicken breasts

  • 1 teaspoon salt, plus more to taste

  • 1/2 teaspoon pepper, plus more to taste


  1. Cook orzo in a pot of salted boiling water until al dente about 7 minutes

  2. Meanwhile, whisk together 5 tablespoons oil, lemon juice, garlic, salt, and pepper

  3. Drain orzo, transfer to a bowl, and toss with dressing

  4. Season chicken with salt and pepper and heat a large skillet over medium-high heat with remaining tablespoon oil

  5. Cook, flipping once, until golden and just cooked through, 1 to 2 minutes a side and transfer to a plate

  6. Add artichoke hearts to skillet; cook, stirring, until warmed through, about 1 minute

  7. Transfer to bowl with orzo along with shredded chicken, grape tomatoes, and feta

  8. Toss to combine; season with salt and pepper

  9. Serve in lettuce cups

  10. Enjoy! (Can store in refrigerator up to 2 days)
