Shrimp Tacos with Creamy Chipotle and Lime Yogurt Sauce

Sauteed shrimp holds a special place in my heart because it was my first foray into cooking seafood. I used to be an extremely picky eater (any meat besides bolongna was off the table so fish was just beyond) but now I live for the entire food group. ESPECIALLY crustaceans. The sauce is spicy and delicious but still has a yogurt flair, so if it isn't your thing then replace with mayo (I still have trouble cooking with the condiment because large quantities of it give me the heebie jeebies). Also, I wanted to include avocados but I got so caught up photographing them (so I could eat them as quickly as possible) that I totally forgot to add the slices! Yes, they are that good. :)

Ingredients:

For shrimp:

  • 1/2 pound fresh jumbo shrimp

  • Red onion, sliced

  • 1/4 cup soy sauce

  • 3 cloves garlic, minced

  • Salt and pepper to taste

  • 2 cups green cabbage, shredded

  • Flour torillas

  • Avocado, thinly sliced (don't forget like me!!)

For sauce:

  • 1 cup greek yogurt

  • Juice from 1 lime

  • 1/4 teaspoon to 1 teaspoon chipotle sauce (depending on how hot you like things!)

  • Salt and pepper to taste

  • Pinch of cayenne pepper

Directions:

  1. Wash and devein shrimp.

  2. Slice red onion lengthwise, and then into smaller pieces.

  3. Place medium sauce pan on low-medium heat.

  4. Add soy sauce, shrimp, onion, minced garlic, salt, and pepper.

  5. While shrimp and onions are cooking, mix the together yogurt, lime, chipotle sauce, salt, pepper, and cayenne pepper in a bowl. 

  6. Continue to stir shrimp until cooked (pink in appearance) approx. ten minutes.

  7. Prepare flour tortilla with cabbage and avocado slices.

  8. Serve the shrimp and onions hot and immediately top with yogurt sauce.

  9. Enjoy!
