Whole Wheat Prosciutto Breakfast Pizza

Pizza for breakfast. Music to MY EARS. I bought pre-made whole wheat dough from TJ's so all it took was a little cheese, prosciutto from Zabar's (the best), eggs, scallions, chives, and 15 minutes at 450 degrees. 

Ingredients:

  • Whole wheat pizza dough

  • 2 scallions, both white and green parts, finely chopped

  • 3 eggs

  • 1/2 cup shredded mozzarella

  • 1/4 cup grated parmesan cheese

  • 1 tablespoon chives, minced

  • Few slices prosciutto

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

Directions:

  1. Preheat oven to 450 degrees.

  2. Prepare dough by sprinkling with flour and kneading on a clean, dry surface.

  3. Once dough is well kneaded into a circular shape (make sure to pinch the outside to create crust), begin to add toppings.

  4. Start with a layer of mozzarella and parmesan cheese.

  5. Add eggs.

  6. Then top with remaining cheese, prosciutto, scallions, salt, and pepper.

  7. Place on pizza stone or baking sheet. 

  8. Cook for 15 minutes.

  9. Garnish with chives and enjoy!
