Banana Bites with Homemade Vanilla-Cinnamon Cashew Butter

This past week in Boston I had drinks with my friend and sometimes vegan, Courtney!  Between reminiscing about our days spent in the fashion closet at Harper's Bazaar  we (of course) talked food. She has the most amazing vegan food blog, The Sober Vegan! Not only does Court post the most delicious recipes, but it's also so witty and cute. A big peanut butter fan, I knew I had to make her Cashew Butter ASAP.  It's vegan, packed with fiber and protein, and only has three ingredients!

When making it, be patient, as with my little (albeit sturdy and reliable) Cuisinart food processor, it took 10 minutes of blending before becoming it's creamy, nutty, spreadable self. One bite and its hard to believe that there is NO added sugar, oil, or artificial ingredients. I put it on bananas, but the healthy options are endless!

Yield: 1 cup

Prep time: 5 minutes

Cook time: 10 minutes

Total time: 15 minutes

Ingredients:

  • 1 cup raw, unsalted cashews
  • 2 tsp. vanilla extract
  • 1/2 tbsp. ground cinnamon

    Directions:

    1. Place all ingredients in food processor
    2. Blend for 5-10 minutes until butter's texture is smooth and fluid
    3. Spread away!
