Apple Pie Cupcakes

I baked these last year for the first time and I cannot wait to get to the farmer's market this weekend to pick up fresh apples for round 2. I made them with two types of apples (Granny Smith and Honeycrisp) for a more robust apple flavor. Sweet and best served warm, they are the quintessential fall treat. And my favorite part? My kitchen smells like toasted cinnamon for the rest of the day.


Yield: 24 cupcakes


  • 3 cups sifted cake flour
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 cup unsalted butter, at room temperature
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 tsp. vanilla extract
  • 1 cup milk
  • 1 tbsp. butter
  • 2 tsp. cinnamon
  • 2-3 tbsp. sugar
  • 4 large apples (2x Granny Smith and Honeycrisp) peeled, cored, and diced
  • Vanilla buttercream (I used 3/4 a batch)
